In 2010 Pancake Tuesday (Shrove Tuesday) is on Tuesday 16th February!!!

Shrove Tuesday is just around the corner so it’s time to hunt out that pancake pan and check out your stocks of eggs and flour. Shrove Tuesday is traditionally the time to clear all those fatty ingredients from your cupboard before fasting for Lent. What a perfect excuse for making pancakes!
Why not try out our basic Pancake Recipe and fill with some of these delicious fillings that the whole family can enjoy…..


Basic Pancake Recipe

Cooking Time: 25-30 minutes
Serves: 3

Ingredients:

• 100g plain flour
• 1 egg
• Pinch of salt
• 250 ml milk
• 25-50g caster sugar
• Oil fry frying

 

Equipment: Bowl, Sieve, Balloon Whisk, Spatula, Measuring Jug, Frying Pan (non-stick where possible), Fish slice, Plate.

Method:
1. Sieve flour and salt into bowl, make a well in the centre.
2. Drop in egg and half the measure milk. Beat with a whisk, allowing the flour to fall in gradually from the sides. Beat until the batter is completely smooth – no lumps.
3. Add remaining liquid, beating well for 5 minutes to entrap as much air as possible.
4. Pour into jug and store in fridge if not using straight away.
In a hurry!! Buzz all ingredients together in a liquidizer/processor or an electric hand blender.
5. Heat oil in frying pan, and pour in a small amount of batter, just enough to coat the base of the pan. Tilt pan to spread the batter.
6. Cook until the edges begin to brown and lift from pan. Shake the pan to loosen the pancake.
7. Turn using the fish slice or toss and cook the other side. Put onto plate.
8. Cover and keep hot over simmering water.
9. Repeat the process with the remaining batter.
10. Sprinkle or spread each with filling of choice. Roll up.

Savoury Stuffed Pancakes

Cooking Time: 35-45 minutes
Serves: 3
Ideas for savoury fillings…..
• 150g grated cheese and 125g chopped ham
• Chopped grilled bacon mixed with pineapple chunks and cottage cheese
• Sliced cooked sausages, chopped tomatoes and grated cheese.
 


Method:
1. Preheat oven to 170°C/Fan 160°C/Gas Mark 4.
2. Make pancakes, keep warm, put a dessertspoon of mixture into the centre of each and roll up.
3. Put pancakes on a greased serving dish, coat with 10g melted butter and sprinkle with a little Parmesan cheese.
4. Bake for 10-15 minutes until heated through.
5. Garnish and serve hot as a starter, for a snack or for lunch!


Sweet Filled Pancakes

Cooking Time: 25-35 mins
Serves: 3
Ideas for sweet fillings…
• Sweetened stewed apples with cinnamon or cloves
• Raspberries or strawberries and whipped cream.
• Traditional - a squeeze of lemon and a sprinkling of sugar
• Sliced banana and a spoonful of honey
• Chocolate - either a spread such as Nutella, or a bar such as a crumbled Flake
 


Method:
1. Make pancakes, keep warm, put a dessertspoon of mixture into the centre of each and rollup. Sprinkle with sieved icing sugar.
2. Garnish and serve as a dessert dish with cream, custard or a fruit coulis.
